Tasting Notes: A naturally lightly sparkling Welsh wine that's pale amber in colour. Pear drops on the nose lead to fresh stone fruits and a deliciously rich palate.

More Info: The Solaris was crushed, macerated for 3 days, then pressed and fermented in stainless steel. The Ortega was crushed, had 2 days of skin contact, then pressed. The Ortega was then blended with the Solaris and co-fermented using wild yeast in steel. The wine was bottled by hand using gravity, without any fining or filtration, just before the end of the primary fermentation. Bottles were then disgorged by hand on a cold spring day.
Whinyard Rocks is run by Susan and James, a couple with a passion for good food and drink and "making things from scratch". James previously worked as a scientist while Susan was at a sustainable food and drink start up. When James had the idea to plant vines on the family farm in mid Wales, they gathered their friends and started planting. Before long, they had moved from their home in London and settled at the Farm where they tend to their low-intervention vineyard as well as run a boutique holiday cottage.
