More info: Produced using the ancestral method, which is the oldest and most natural way to make sparkling wine. Grapes from the Zagreus vineyards are handpicked in early September and gently pressed, the juice undergoes a spontaneous fermentation in stainless steel tanks. It’s then hand-bottled before fermentation finishes, allowing it to complete naturally in the bottle and create its fine, delicate bubbles. Each bottle is carefully disgorged before release to remove the yeast sediment, resulting in a pure and beautifully balanced wine.
