Pairing: Pedro Ximenez is a sherry for dessert itself. It goes perfectly with dark chocolate, excellent with ice cream and even pairs well with blue cheeses. You can also pour some onto a couple of scoops of vanilla ice cream as an alternative to Christmas pudding.
More Info: Oxidatively aged, partially fermented musts of dried Pedro Ximenez grapes. Aged for approximately 12-14 years through the process of “Soleras and Criaderas” in American oak casks.
