More Info: Whole bunch carbonic maceration allows fermentation to begin in the grapes causing the grapes to burst open naturally.  Native yeasts living on the grapes were allowed to ferment the sugars with no additions. The juice was left on the skins for 30 days for maximum colour and tanning extraction before being transferred to oak barrel for aging and malolactic fermentation. The wine was then gravity cleared with no addition of finings before racking and bottling.

Tair Gafr Wines is a small, organically certified vineyard in the heart of the Vale of Glamorgan, established in 2019.  The focus is on producing quality Welsh wines, while preserving the biodiversity and the nature in and around our vineyard. They do not use any chemical pesticides or fertilisers, choosing to make all their own sprays from the nettles, willow and horsetail that grow around the vineyard. Even the animals have specific roles to minimise the amount of machinery used.

The vineyard is also home to mini sheep, alpacas and pygmy goats that are available to book for nature walk during the summer months.
