More Info: The grapes are harvested at night in two stages. The first early harvest happens at the beginning of August to keep the grapes fresh. Two-to-three weeks later the rest of the grapes are harvested to obtain a better concentration of the varietal aromas. The two profiles are then blended after the end of alcoholic fermentation.
Total destemming, followed by 4 hours' maceration at 5°C before pressing. Static settling for 24 hours before yeasting the must. Alcoholic fermentation takes place at 15°C. No malolactic fermentation.
70% of the resulting wine is matured in stainless steel while the rest matures in oak barrels for 3 months.
