More Info: A twist on Australia’s unique sparkling red which is usually made with Shiraz. Merlot lends itself quite well to it thanks to its intensely fruity flavours. A base wine is made using 100% Merlot grapes in a dry style. It’s then matured to 18 months in two-year-old French and American oak before the secondary fermentation is then carried out. The wine is then “liquered” to the desired sweetness.
