Vegan. Organic. Biodynamic. Low Sulphur.

Pairing: Fresh sushi, Indian cuisine or a creamy/nutty cheese like a Brie or Compte.

More info: Grapes are hand-harvested before taken to the winery, crushed and macerated for a period, which kickstarts the spontaneous fermentation using indigenous yeast. The wine is moved by gravity along different floors and the final wine is bottled unfiltered and unfined with minimal use of sulphur.

The Mitchlits family run a 2,000 hectare biodynamic estate in the Burgenland region of Austria. Angela is the winemaker while her husband takes care of operations and his younger brother looks after the herd of Angus deer, which is what provides the soil with all its special nutrition.
