More Info: Planted high on the cooler Pyrenean slopes of the Haute Vallée de l’Aude, The Ruse grows on clay-limestone soils that deliver tension and lift. These parcels are typically earmarked for Crémant de Limoux, but here the fruit is left to hang longer and picked among the latest of the season, building ripe flavour while altitude preserves a refreshing, cut-glass acidity. Fermentation and maturation take place in a mix of new and seasoned French oak, adding subtle spice and texture without overwhelming the fruit.
