More Info: The grapes are harvested at night to maintain a cool temperature. A short, two-hour skin maceration is carried out before pressing. The must is thoroughly clarified to obtain the clearest possible juice. Alcoholic fermentation is temperature-controlled at 14°C. Malolactic fermentation is not performed.
